VINEYARDS BY THE SEA
In October we planted the first 2000 vines by the sea, with friends, family and members of our staff. Today, they have sprouted, changing the landscape in front of the Lodge. A new project has begun: the production of the first marine wine in Argentina. Nowhere else in our country can vineyards be found this close to the sea. Matias Michelini, one of the most prestigious and prolific winemakers in Argentina and the famous creator Tato Giovannoni, considered one of the world´s best bartenders, have joined us in this project.
Our guests now enjoy a different view from the Main Lodge and our Restaurant: the sea & the endless skies, framed by the beginning of this project. We will keep you posted!
OUR VEGETABLE GARDEN
Always with conservation & respect towards our environment in mind, we have renovated our vegetable garden, transforming it into a biodynamic project. We have built a new circular structure, which flows with the rythm of water and light, where fruits, vegetables and flowers live and collaborate.
We follow a biodynamic calendar, the moon, the sun and the astrology to enhance the health and production of plants.
Our vegetable garden provides our Restaurant with fruits, olives, berries and a wide variety of vegetables, aromatic herbs and edible flowers.
SEA SALT & SALICORNIA HARVESTING
By the sea, we continue to harvest sea salt and salicornia manually, not only to be used at our Restaurant, but also toprovide it to some of the best chefs in our country, like German Martitegui and Narda Lepes, who discovered new flavours here after their stay with us.
OLIVES
Inlands, we have planted more than 300 olive trees; the first step towards olive oil production.
